Coconut White Choc Treats
Walking in Whitfield, Northumberland, my mother bought these, or something very similar. I managed to surpass myself a few weeks ago my leaving my phone on the roof of my car after walking dogs nearby, I ended up in the only village shop I have ever been to with a woodburner; just what was needed on a really cold day after a frustrating walk down the road in search of my never to be found phone. We were back again last weekend and these are a re-creation. Very sweet and very yummy.
INGREDIENTS
1 tin of condensed milk (397ml)
200g dessicated coconut
50g candied cherries
20g dried cranberries
150g white chocolate
1. Preheat the oven 160C/320F
2. Mix the condensed milk with the coconut and fruit. Place on baking paper in a tin about 20 x 15cm.
3. Bake for 20 minutes until firming up when pressed lightly.
4. While it is baking, melt the white chocolate in a bowl set over a pan of simmering water. Make sure the bowl does not touch the water.
5. Spread the white chocolate on top of the bake. Refrigerate until set.
