Mint and Garlic Aubergine

A bonus to this is that you can make a larger batch and it will keep for quite some time in the fridge. Bring to near room temp before serving though. It would go well simply with rice, salad, alongside lamb, with some flat bread and so on…

INGREDIENTS
2 Aubergines, thinly sliced.
1 large handful mint
3 garlic cloves
5 tbsp oil olive oil plus olive oil for frying aubergine
Seasoning

1. Whizz the mint, garlic and olive oil in a blender. I used a spice blender.
2. Heat a frying pan until very hot and add some oil. Fry the aubergine slices until browned on each side. Lay them on a dish and when all of the aubergine has been fried, pour over the dressing.
3. When you are ready to eat, dig in.
