Chicory, Orange, Cucumber, Salmon and Dill Salad

Today after doing an incredible amount of gardening which so far is completely out of character, I looked in the fridge and this is what I came up with. And this will definitely be repeated. I love having limited ingredients and coming up with something. Uncomplicated and rewardingly delicious.

I discovered too recently that if you add water to salad dressing, it really bring it to another level.


INGREDIENTS
Dressing
2 tbsp lemon juice or white wine vinegar
1 tsp dijon mustard
6 tbsp virgin olive oil
half a clove of garlic, very finely chopped
pinch salt
2 tbsp water

Salad
1 chicory bulb
1 orange, segmented (cut the top and bottom and sides before using a knife to cut skinless segments)
Juice of 1 orange
1 handful fresh dill
half a cucumber
1 packet of salmon

1. Put all of the dressing ingredients in a jam jar and shake shake shake.
2. Peel and thinly slice the cucumber, slice the chicory and cut the dill with scissors into the salad bowl.
3. Cut the salmon into the bowl and toss the dressing in. Toss in the juice of one orange and serve.
