Caesar Salad

Caesar Salad brings back memories of being in Canada where half of me comes from. Salad became a treat. Here is a recipe I added lots of bacon and chicken to so everyone was happy.

Serves 4

INGREDIENTS
10 rasher bacon
2 free range or organic chicken breasts
1 Romaine lettuce
Dressing
2 cloves garlic, grated
2 tbsp lemon juice
6 tbsp olive oil
1 tbsp creme fraiche
3 tbsp finely grated parmesan cheese
4 anchovies
Seasoning


  1. Fry the bacon rashers until crisp. Chop into pieces with scissors and set aside.

  2. Smash the chicken with a rolling pin between two sheets of baking paper.

2. Season the chicken in the bacon fat until browned on both sides and cooked through.

3. Cut the chicken into strips with scissors and fry further if it is at all pink. Add the bacon to the pan and set aside.

4. In a jar put all of the dressing ingredients. Season to taste, adding more oil and lemon as necessary.

5. In a large bowl put the salad and the dressing. Toss it for a full minute before adding the meat.

6. Transfer the salad to a serving dish. Sprinkle more parmesan on top.

7. Enjoy (I love Caesar salad with chips!)
