Salt Caramel Sauce

I’ve had to be in Northumberland due to an emergency so I have posted nothing at all. At the end of a difficult week, caramel sauce is what I need, on top of ice cream. A complex week ending with a comforting caramel. Just what the doctor ordered. Goes beautifully with chocolate brownies and berries and bananas and cake and and and wonderful for lifting the spirits.

This is quite a rich caramel sauce.

INGREDIENTS
150g brown sugar
75g golden syrup
50g unsalted butter
1 tsp salt
200mls cream

  1. Put the sugar, golden syrup, butter and salt in a pan over a low heat.

2. When it has melted, turn up the heat and allow to boil for about 7 minutes.

3. Add the cream and let it simmer for another 5 minutes.

4. Remove from the heat and when it is not boiling hot, pour it into a pretty jug. Serve warm or cold. Amazing swirled into chocolate brownies before baking, and also added on top. Yum yum.
