Watermelon Salad
This is the second time I have posted this, by mistake admittedly! It is a winner. Everyone loves it, even my salad hating son. Also it is so colourful so perfect for a sunny lunch, whether metaphorically or actual. The dressing is less strong than the usual one third vinegar or lemon to 2 thirds oil; it needs to be subtle so it just compliments flavourful ingredients.
Serves 4
INGREDIENTS
Half a melon - you are looking for about twice the amount of melon to cucumber.
1 large cucumber
1 packet of Feta cheese
Black Kalamata Olives
Fresh Coriander (optional)
Freshly ground black pepper
DRESSING
1 tsp Dijon Mustard or half a tsp of mustard powder
White balsamic vinegar or white wine vinegar
Mild Virgin Olive Oil
Seasoning
I'‘m afraid I never measure out dressing. In this case I used a 250ml capacity jar.
1. Add the mustard to the jar.
2. Quarter fill with white balsamic or white wine vinegar and top up with about 4 times the amount of mild virgin olive oil.
3. Add salt and pepper and shake well before adding.
1. Roughly chop the melon, cucumber and Feta into a bowl and top with olives.
2. Put the dressing ingredients in a jar and shake well before adding to the salad.
3. Toss the ingredients together with the dressing and add the coriander at the end and some pepper.
