Caramelised Pomegranate Pork Steaks
Today I was in Co-op, or ‘Coop’ as my daughter calls it, with her buying bits and pieces for a social distancing picnic down by the river. At a loss for what to cook for dinner, I saw outdoor bred pork steaks which reminded me of this recipe. It is really very delicious and I think next time I am allowed to have friends for dinner, this is what I will cook, not only because it is so good, but also because it can be prepared in advance.
Serves 4
3 tbsp olive oil
8 pork steaks
2 red or white onions, sliced
4 cloves garlic, thinly sliced
2 tbsp pomegranate molasses
3 tbsp dark brown sugar
1 tsp salt
200mls water
1. Preheat the oven to 160ºC.
2. Heat the oil in a heavy based pan until it is hot, but not piping hot. Add the pork steaks. When they are lightly bronzed, turn them over and do the same with the other side.
3. When the steaks have been well seared mix in the onions and garlic.
4. Turn the heat down to medium and cook the onions and garlic, stirring now and then, until they are glossy and softening. This will take about 4 or 5 minutes.
5. Add the pomegranate molasses and sugar and salt and then stir it all together.
6. Now pour in the water and stir well.
7. Put a lid on the pan and place it in the oven for 1 and a half hours, or until very tender. The onions should be sticky and caramelised.
8. Serve with whatever you like. We had creamy mash and asparagus. Forgive the photograph as I threw some bruised basil leaves on top. They don’t quite look the part!
